Reasons Why Organic Beef is Better for You

Going green was one of the best lifestyle changing decisions we made some years ago before the birth of our first child. We had lots of reasons to go green and to raise children who will  also be environmental friendly. This decision affected our lifestyles positively and most especially the things we eat. We buy locally produced crops, fruits and vegetables from our local organic farmers and our meat/dairy products are bought from farms/ranches that take care of the environment because they raise their animals in an ethical manner.

While I still like to eat organic natural beef, I'm amazed at the type and quality of meats that are being produced everyday by industrial farmers. Their animals are fed antibiotics,GMO feed and other artificial drugs, the bovine human growth hormone, etc. Ranch raised are clues that the animals were raised in a more human way. They are not confined but spend time out doors in the fresh air. Their livestocks are raised traditionally, humanely and sustainably to produce the finest tasting food in the world. All their animals are raised outdoors or in deeply bedded pens. If you still enjoy eating your meats, especially now that the holiday/festive seasons are drawing near, why not try switching over to cattle that are all vegetarian fed and you can not only notice the quality and taste of the natural meat but you are also helping to support a healthier environment.

Here are Some Reasons Why Organic Beef is Better for You

1.  Natural beef  is healthier for you and your family. Animals raised organically are not allowed to be fed antibiotics or artificial drugs. They are also not allowed to eat genetically modified foods.

2.  Switching to natural beef can help keep our environment clean. They are raised in a healthier environment, fed organic feed and often eat a wider range of nutrients than those raised in factory farms.

3. Natural beef is more tasty. Organically raised animals have been shown to be significantly healthier and tastier  than their factory counter parts.

A Loyal Dog Guards Grave Of Deceased Master

People living in a Chinese village have been so moved by a dog that has been guarding the grave of its deceased owner they plan to build a kennel for him.

The yellow dog belonged to Lao Pan, a single man who died earlier this month aged 68.

After his room in Panjiatun village near Qingdao city, Shandong Province, was cleared his dog disappeared.

But villagers later found the dog by the grave of its owner. Reports say that for seven days, the dog stayed there, refusing to leave.

Seeing that the dog was going without food, the locals tried to take it back to the village and gave it some buns.

The dog took the buns and returned to the graveyard.

Now the villagers are taking food and water to the dog regularly and plan to put up a kennel for it near its owner’s grave.

The story is reminiscent of Edinburgh’s Greyfriar Bobby, a Skye terrier who, history recalls, spent 14 years at his master’s grave in the 19th century.

He is now immortalised with a bronze statue in the city and has his own website.

Bobby belonged to John Gray, who worked for Edinburgh City Police. He was two when Gray died of tuberculosis in 1858 and was buried in Greyfriars Kirkyard.

The dog apparently spent the rest of his life sitting on his master’s grave, cared for by well-wishers.

Several books and films have been based on his story.

Thanksgiving: A Great Start and a Fabulous Finish

Adding a warm cup of delicious soup to your holiday menu can help to stimulate the appetite without filling you up. Homemade soups are a great way to kick off your holiday meal, and they make great leftovers for a light lunch. And while pies are the norm at the Thanksgiving table, starting your own tradition with a unique dessert can create a memorable finish with annual requests for more. Delight in the flavors of the season with these yummy recipes.

Butternut Squash and Roasted Garlic Soup  

The bright orange color of butternut squash is a seasonal addition to your holiday meal. For families with babies over 8 months old, this soup can be easily made into baby food by thickening it with mashed rice, potato, or baby cereal. 

Ingredients:

• 1 Large or 2 small butternut squash (4 lb)
• 20 garlic cloves ,peeled
• 2 Tbsp. olive oil
• ¼ cup water
• 4 cups (32oz.) chicken broth
• 1 can (12oz.) coconut milk or 1 cup half & half
• 1 tsp. tarragon
• Salt and Pepper, to taste
• Zest of 1 lemon, finely grated
• Chives or Parsley, chopped as garnish (optional)

Directions:

Preheat oven to 350° F. Cut the squash in half lengthwise and remove seeds and fibers. Using a vegetable peeler or a paring knife, remove the skin from the squash and cut the flesh into 1-inch thick slices.

In a roasting pan, combine the squash and garlic cloves. Sprinkle with salt and pepper. Drizzle with olive oil and toss with a spoon until well coated. Pour in the water. Roast, stirring occasionally, until the squash and garlic are soft and golden, about 50-60 minutes. Add a bit more water if the squash begins to look dry or scorched. Remove from the oven and set aside to cool slightly.

Combine roasted squash and garlic with 2 cups of the stock in a blender or food processor. Puree until very smooth, about 1 minute. (You may need to work in batches to prevent overflowing the blender). Transfer the puree to a large soup pan. Stir in the remaining soup stock, coconut milk (or Half & Half), tarragon, and lemon zest.

To serve, warm soup thoroughly and ladle into soup bowls. Sprinkle with chopped chives or parsley.

Makes 8 servings

Note: Can be made 1-2 days ahead of time and stored in the refrigerator or frozen up to 2 months.

Soft Pumpkin Cookies

A nice alternative to pumpkin pie, these soft cookies are a delightful treat. The little ones can help with this easy recipe. Make them in advance and freeze them to seal in freshness. The cookies will thaw in one hour at room temperature. You are sure to create smiles with this dessert.

Ingredients:

• 2-1/2 cups flour
• 1 tsp. baking soda
• 1 tsp. baking powder
• 1 ½ tsp. pumpkin pie spice
• 1/2 tsp. salt
• 1-1/2 cups granulated sugar
• 1/2 cup butter (1 stick), softened
• 1 cup canned pumpkin
• 1 large egg
• 1 tsp. vanilla
• Orange Glaze (recipe follows)

Directions:  

Preheat oven to 350° F. Grease baking sheets.  

Combine flour, baking soda, baking powder, pumpkin pie spice and salt in medium bowl. Beat sugar and butter in a large mixing bowl until well blended. Beat in pumpkin, egg and vanilla until smooth. Gradually beat in flour mixture. Drop dough by rounded tablespoons onto prepared baking sheets.  

Bake 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Orange Glaze over cookies. 

ORANGE GLAZE:  

Combine 1-1/2 cups sifted powdered sugar, 2 to 3 tablespoons orange juice and 1/2 teaspoon grated orange peel in medium bowl until smooth.

Makes 20 cookies

Losing Our World’s Languages

Every 14 days a language dies. By 2100, more than half of the more than 7,000 languages spoken on Earth—many of them not yet recorded—may disappear, taking with them a wealth of knowledge about history, culture, the natural environment, and the human brain.

National Geographic’s Enduring Voices Project (conducted in collaboration with the Living Tongues Institute for Endangered Languages) strives to preserve endangered languages by identifying language hotspots—the places on our planet with the most unique, poorly understood, or threatened indigenous languages—and documenting the languages and cultures within them.

Why Is It Important?

Language defines a culture, through the people who speak it and what it allows speakers to say. Words that describe a particular cultural practice or idea may not translate precisely into another language. Many endangered languages have rich oral cultures with stories, songs, and histories passed on to younger generations, but no written forms. With the extinction of a language, an entire culture is lost.

Much of what humans know about nature is encoded only in oral languages. Indigenous groups that have interacted closely with the natural world for thousands of years often have profound insights into local lands, plants, animals, and ecosystems—many still undocumented by science. Studying indigenous languages therefore benefits environmental understanding and conservation efforts.

Studying various languages also increases our understanding of how humans communicate and store knowledge. Every time a language dies, we lose part of the picture of what our brains can do.

Why Do Languages Die Out?

Throughout human history, the languages of powerful groups have spread while the languages of smaller cultures have become extinct. This occurs through official language policies or through the allure that the high prestige of speaking an imperial language can bring. These trends explain, for instance, why more language diversity exists in Bolivia than on the entire European continent, which has a long history of large states and imperial powers.

As big languages spread, children whose parents speak a small language often grow up learning the dominant language. Depending on attitudes toward the ancestral language, those children or their children may never learn the smaller language, or they may forget it as it falls out of use. This has occurred throughout human history, but the rate of language disappearance has accelerated dramatically in recent years.

This is a new advertising campaign from Boy Scouts of America. It's an effort to promote the Boy Scout new initiative to "be one with the wild", but most people don't seem to agree that they should go this far with the kids (the beard thing).

How To Prepare For A Long Distance Move

Preparing for a long distance move can be exciting. As an Expert woman, I've learnt from experience always to be open to new ideas and to be more informed. Every different move can have some few new challenges/surprises that comes with it. There are some mistakes some people make repeatedly but considering some of these few tips will help you to prepare yourself even more better.

1. Organise yourself. As soon as you know you are leaving and have started making some arrangements towards that, try giving notice to the electric and cable companies, give a written notice regarding your house/apartment, de-register at the city hall, contact a long distance moving company, etc.

2. Do not hesitate to tell anyone you want. It is advisable to tell some good people that you have had contact with. Tell them you'll be needing their help and ask if there is anything you need to do in advance.

3. Consider getting quotes from long distance movers. Some people have problems deciding moving or selling their stuffs. This is a personal decision but I prefer moving my stuffs. It makes me feel at home at my new place. Check if there is so much difference from the charges for moving some or all your stuff and decide on what goes with you and what stays behind.

4. If you have children, keep them involved in the plans for the move as much as possible. Research the school system, social life, etc of the place you are going to and ensure that not only you but your children have some idea of what to expect.

5. Don't forget the people you are leaving behind. Arrange for mail forwarding. Get their email addresses (or phone numbers if you can) so that you can contact them if you need to. Give them your new address, Facebook details or email address in advance because you might forget it as you have lots of things going on in your head.

6. Enjoy your last days. As soon as you leave, you will miss a lot of things. Make a list of things you would like to see or do. It could be places to visit, dates with friends, sharing times with families or whatever. Just explore them all. The memories will do you good.

7. When the day comes, relax and enjoy your ride. Your new life could even be better than the good life that is coming to an end (I bet it will). Accept it with an open mind.

This Mama Forgot to Buy Halloween Sweets

So many noise was made about Halloween. We talked about it several times, decorated the house and we even made some Halloween crafts. Personally, I don't do anything special on this day and my kids don't like dressing up for Halloween. One thing I always to do for sure is - Stuff my Candy Box with lots of  SWEETS.

On Halloween , I was about putting my kids to bed (at night) when I heard the first knock at the door. It was my friend with her daughter all dressed up in cute costumes. We were still  chatting at the door when the little girl (5 years) yelled "Nekky, we want some sweets". When I ran to the kitchen, I noticed that I had almost no sweets at home. I gave her a couple from what I had and saved the rest for any other emergency visit/s (from other kids). That night, I got the highest visits ever. Our door bell was ringing non-stop. I ran out of sweets after the first two visits and I couldn't open the door any more. Some of the kids had their baskets already filled with assorted types of sweets ( I wonder what they do with all of them). How can I explain to these expectant kids that I don't have any sweets to offer them? They will just mark me as that Mean Woman. It made feel kind of bad.

One thing I noticed this time (because I was peeping out of the window to know who was ring the door bell) was that not only the kids, but some of them were accompanied by their mothers. I find it cute but I don't know if I can do it (anyway, whatever makes the kids have fun). How could I have forgotten to get myself prepared for this? Anyway, I have a better plan for next year. Since my kids don't like dressing up, I'll dress up, stand behind the door and scare those kids before handing out my candies to them.
